Welcome to Delhi Spice. I'm Sudhir Kumar, Managing Partner and your host. I was born and raised in New Delhi, where my love for hospitality began early — first in hotels, and then in the restaurant world, where I truly found my calling. Over the years, I’ve worked to bring the bold, authentic flavors of India to every table I serve.

My Story

After building my career in New Delhi, I had the opportunity to move to Washington, D.C., where I helped lead several well-regarded Indian restaurants. But my dream was always to create a space of my own — one that felt warm, welcoming, and proudly Indian.

That dream became Delhi Spice, a place I opened with my favorite chefs, blending fine dining with rich, comforting flavors from home. I’m deeply involved in every aspect of the restaurant — from selecting spices to greeting guests at the door. I still love stepping into the kitchen and making some of my favorite dishes, like our Lamb Boti Kebabs, creamy Chicken Tikka Masala, crispy Okra (Bhindi), and of course, the indulgent Chole Bhature.

Whether you're a first-time guest or a longtime regular, I want you to feel at home here — to experience not just the food of India, but its heart.

Hello

I'm Edwin Dass, Chef Partner here at Delhi Spice. I was born and raised in New Delhi and came to the U.S. in 1999 to pursue my studies — but it wasn’t long before I found myself drawn to the kitchen.

My Story

While in school, I began working in restaurants, and it quickly became clear that cooking was more than just a job — it was a passion. I had the privilege of learning under one of the region’s top Indian chefs, where I built a strong foundation in traditional Indian cooking, especially in sauces and the art of the Tandoor.

Over the past decade, I’ve continued to grow, exploring regional Indian flavors and refining the dishes I love most. Some of my personal favorites to prepare (and eat!) are the rich and tender Bhuna Goat, the spicy and bold Chicken Chettinad, and the crowd-pleasing Chilli Chicken.

At Delhi Spice, my goal is to bring depth, balance, and authenticity to every plate — and to give our guests a true taste of India’s culinary heritage.

Hello

I'm Pushp Prasad Shah, Chef Partner at Delhi Spice. I was born and raised in Nepal and bring a deep love for Northern Indian cuisine to our kitchen. In 2012, I moved to the U.S. and began working in some of the top Indian restaurants in the Washington, D.C. area.

My Story

My journey through the restaurant world allowed me to grow both as a chef and as a teammate. Along the way, I met some incredible people in the industry — including the partners I now proudly work with at Delhi Spice. Being part of this ownership team is something I’ve always dreamed of, and I’m honored to bring my experience and passion to this restaurant.

Seafood is one of my specialties, and I especially enjoy preparing dishes like our Tandoori Salmon and flavorful Shrimp Curry — bold, aromatic, and cooked with care.

At Delhi Spice, I strive to create food that not only satisfies but tells a story — one of tradition, culture, and heart.
